Wagyu Beef Jerky

Beef jerky is low-carb and still good for energy. It's a healthy snack. You can make your own beef jerky at home. It takes time, but you can make it with your favourite taste and softness. The spicy seasoning of black pepper goes very well with rich Wagyu beef taste. Put Netflix on and serve your beef jerky with a pint of your favourite beer. Itadakimasu.



  • 400g Kobe / Wagyu Beef Block (topside, rump, chuck roll)

  • 2 tbsp Red Wine

  • 2 tbsp Soy Sauce

  • 2 tsp Mirin (white wine)

  • 1.5 tsp Black Pepper

  • 1.5 tsp Garlic Powder

  • 1/3 Sea Salt


  1. Place the beef in the freezer for 2 hours to make it easier to slice.

  2. Slice against the grain of the beef to a thickness of about 4mm.

  3. Place the beef, red wine, soy sauce, mirin, black pepper, garlic powder and salt into a bowl and mix well. Wrap some cling film over the bowl. Keep it in a fridge for 2 hours.

  4. Preheat an oven to 120°C fan/275°F/gas 1.

  5. Place the beef onto a wire rack over a baking tray.

  6. Transfer to the oven and cook for 60mins.

  7. Turn the beef and cook for another 60mins. 

  8. Leave to air dry for up to 24 hours if you like.


Serve with a small handful parsley!
