Wagyu Beef Jerky

Beef jerky is a low-carb, high-protein snack that's great for a quick energy boost. It's also a healthier alternative to many other snacks out there. Plus, making your own beef jerky at home allows you to customize the flavor and texture to your liking. If you love a little heat, try our black pepper Wagyu beef jerky recipe. Ingredients

Method

  • 400g Kobe / Wagyu Beef Block (topside, rump, chuck roll)

  • 2 tbsp Red Wine

  • 2 tbsp Soy Sauce

  • 2 tsp Mirin (white wine)

  • 1.5 tsp Black Pepper

  • 1.5 tsp Garlic Powder

  • 1/3 Sea Salt

  1. Freeze the beef for 2 hours to make it easier to slice.

  2. Slice the beef against the grain into 4mm thick slices.

  3. In a bowl, mix the beef, red wine, soy sauce, mirin, black pepper, garlic powder, and salt until well combined. Cover the bowl with cling film and refrigerate for 2 hours.

  4. Preheat the oven to 120°C fan/275°F/gas 1.

  5. Place the marinated beef slices onto a wire rack over a baking tray.

  6. Transfer the tray to the oven and bake for 60 minutes.

  7. Turn the beef slices over and bake for another 60 minutes.

  8. Let the beef air dry for up to 24 hours, if desired.

Serve with a small handful of parsley.
