Wagyu Short Plate is cured with a blend of herbs and spices in the same way as pork pancetta. It is then fermented, and finally air-dried for 3 months. The resultant pancetta has incredible marbling and soft texture. You can thinly slice and enjoy as it is or will be suited to used for wrapping around a stuffed chicken breast before roasting.
